Ingredients
- 1 lb shrimp, peeled and deveined
- 2 russet potatoes, peeled and diced
- 3 cups cooked rice
- 2 eggs
- 1 cup diced carrots
- ½ cup diced onion
- ½ cup peas and corn
- 1–2 tbsp ginger paste
- 3–4 tbsp soy sauce
- 3–4 tbsp sesame oil
- 1–2 tbsp butter
- Green onions, for garnish
- Salt and pepper, to taste
- Optional: kimchi, for an extra kick
Instructions
Heat sesame oil in a large skillet or wok. Add the shrimp, season with salt and pepper, and cook until pink. Remove and set aside.
Add a little more sesame oil to the same skillet and add the potatoes, carrots, onion, peas and corn. Sauté until tender. Stir in ginger paste, to taste.
Add the shrimp back to the vegetables and push to one side. Add a little more sesame oil and scramble the eggs.
Add the rice and butter. Stir it all together, then pour in soy sauce, to taste. Make sure it doesn’t get too salty! Toss everything together and cook until heated through.
Finish with green onions and enjoy! Top with kimchi for more flavor.
