Creamy Mushroom Smothered Salmon Over Wild Rice

This creamy mushroom salmon is giving restaurant dinner without the restaurant bill β crispy, buttery salmon smothered in a rich mushroom cream sauce, served with wild rice and lemon garlic green beans.
And yes, salmon is finally getting the attention she deserves.

Ingredients
- 3β4 salmon fillets
- 8 oz mushrooms, sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- Β½ cup Parmesan, freshly grated
- Salt and lemon pepper
- Paprika
- Cooked wild rice, for serving (follow the rice package instructions)
- Green beans, seasoned with lemon and lemon garlic seasoning, for serving
Instructions
Season the salmon with salt, lemon pepper and paprika.
Heat the olive oil and butter in a skillet. Sear the salmon until golden and cooked through. Remove and set aside.
Add the mushrooms to the same skillet and sautΓ© until golden. Add the garlic and cook for about 30 seconds.
Pour in the heavy cream. Add the Parmesan, then simmer until the sauce thickens.
Add the salmon to a plate over wild rice and spoon that creamy mushroom sauce all over it.
Serve with green beans and prepare to question why you ever paid restaurant prices. π
