Ingredients
- 1 lb large chicken breasts, sliced into cutlets
- 1/2 cup flour
- 1 egg, beaten
- 3/4 cup Italian-seasoned breadcrumbs
- 8 oz angel hair pasta
- 2 Tbsp olive oil
- 3 Tbsp butter, divided
- 4 cloves garlic, minced
- 1 pint cherry tomatoes, halved
- 1 cup Sauvignon Blanc or other dry white wine
- Juice of 1 lemon, plus lemon wedges for serving
- 1 cup chicken broth
- 1/4 cup heavy cream (optional, for a silkier sauce)
- 1/2 cup freshly grated Parmesan, plus more for serving
- Salt, black pepper, red pepper flakes and fresh parsley, to taste
Instructions
Cook noodles in salted water until al dente. Reserve 1/2 cup pasta water before draining.
Coat chicken in flour, dip in egg, then coat in seasoned breadcrumbs.
Heat olive oil and 1 Tbsp butter in a skillet. Cook chicken until golden and cooked through, about 4–6 minutes per side depending on thickness. Set aside.
In the same pan, melt the remaining butter. Add garlic and cherry tomatoes; cook until fragrant and the tomatoes begin to soften.
Pour in the white wine, chicken broth, and lemon juice. Simmer for a few minutes to reduce slightly. Stir in cream if using.
Toss in the angel hair pasta and Parmesan, adding reserved pasta water as needed to make the sauce silky. Season with salt, pepper, and red pepper flakes to taste.
Plate the pasta, top with golden chicken, and finish with Parmesan, parsley, and fresh lemon.
