Cajun Chicken Pasta

First day of October and I'm turning up the heat with this red hot Cajun Chicken Pasta. Save this for later!

Ingredients
- 4 chicken breasts, sliced
- 12 oz penne pasta
- 8 oz mushrooms, sliced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 4 cups heavy cream, or to your liking
- 2 cups Parmesan cheese, freshly grated
- 2 tbsp butter
- 1–2 tbsp Tony's Creole Cajun seasoning
- Salt & black pepper, to taste
- 1 tbsp olive oil
- 1/2 cup reserved pasta water
Instructions
Cook the pasta according to the package directions. Reserve 1/2 cup pasta water, then drain.
Season the chicken with the Cajun seasoning and pepper.
Heat the olive oil in a large skillet and cook the chicken until golden and cooked through. Remove and set aside.
Add the butter, mushrooms and peppers to the skillet. Cook until softened, then add the garlic and sauté for another minute.
Pour in the heavy cream and bring to a gentle simmer.
Stir in the Parmesan until melted and creamy. Add a splash of pasta water if the sauce needs thinning.
Add the cooked pasta and chicken back to the skillet. Toss everything together until coated in the Cajun sauce.
Taste and adjust the seasoning, then serve with extra Parmesan.
