Ingredients

  • 2–3 cups cooked shredded chicken
  • 1 stick of butter
  • 2 potatoes, diced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1/2 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas and corn
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 sheets puff pastry
  • 1 egg, beaten
  • Rosemary, for garnish

Instructions

  1. Sauté the potatoes, carrots and celery in the butter, then stir in the flour.

  2. Slowly whisk in the broth and cream until thick and creamy.

  3. Add the chicken, peas, corn, salt and pepper.

  4. Line a pie dish with one sheet of puff pastry and pour in the filling. Cover with the second sheet and brush with the beaten egg.

  5. Bake at 375°F for 45 minutes, until golden and bubbling.

  6. Garnish with rosemary, grab a fork and enjoy.
