Crockpot White Chicken Chili

POV: You won't be home until late, but need dinner for tonight. This recipe is fast, easy, and oh so creamy.

Ingredients

  • 1–1 1/2 lbs boneless, skinless chicken breasts
  • 1 can pinto beans
  • 1 can black beans, drained
  • 1 can corn
  • 2 cans Rotel diced tomatoes with green chiles
  • 1 packet ranch seasoning
  • Cumin and chili powder, to taste
  • 1 box chicken broth
  • 1 block cream cheese
  • Salt & pepper, to taste
  • Cornbread + other toppings of your choice

Instructions

  1. Add the chicken to the Crock-Pot.

  2. Add the beans, corn, tomatoes, ranch seasoning, other seasonings, chicken broth and cream cheese.

  3. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.

  4. Shred the chicken and stir it back in.

  5. Let it cook another 15–20 minutes, then serve with warm cornbread.

  6. Add other toppings if you would like: sour cream, chives, green onions or shredded cheese.
