Pumpkin Banana Bread with Cream Cheese Frosting

Ingredients

  • 5 ripe bananas
  • 1 can pumpkin purée
  • 4 cups flour
  • 4 eggs
  • 1 cup butter
  • 1 tsp vanilla extract
  • 2 cups sugar
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • Cream cheese frosting

Instructions

  1. Preheat the oven to 350°F.

  2. Mix the sugar and butter until combined. Add in the eggs and pumpkin and combine.

  3. Stir in the flour, baking soda, cinnamon and vanilla extract.

  4. Mash the bananas and combine them into the mixture.

  5. Spray and line a baking dish with parchment paper and pour the batter into the pan.

  6. Bake for 1 hour and 20 minutes. Insert a toothpick or knife to be sure the batter isn't sticky or wet. If the top becomes too brown and the middle isn't cooked all the way, lower the oven to 325°F and cover the bread with aluminum foil.

  7. Spread the cream cheese frosting over the bread and serve.
