Sheet Pan Low Country Boil with Pineapple

Pineapple in a low country boil?!
Pineapple on pizza might be wrong, but THIS? I might have just found the exception. π

Ingredients
- 1 lb shrimp, peeled and deveined, tail off
- Snow crab legs, cooked
- Spicy andouille sausage, sliced
- Red potatoes, cut into wedges
- Corn on the cob, cut into pieces
- Pineapple slices or chunks
- Onion, sliced
- 1/2 stick butter, melted
- Old Bay seasoning to taste
- Fresh lemon, squeezed for juice and garnishing
- Boiled eggs, peeled
- Parsley, for finishing
- Garlic bread, for serving
- Cocktail sauce, for dipping
Instructions
Boil the potatoes and corn until they're almost tender.
Transfer to a large baking sheet and add the sausage, shrimp, onions, eggs and pineapple.
Toss everything with melted butter and Old Bay seasoning.
Bake in the oven at 400Β°F for about 10β12 minutes, or until the shrimp is opaque and the potatoes and corn are tender.
Top with crab legs and put back in the oven for another 5β10 minutes, or until the crab legs are warm. Don't overcook the crab legs!
Finish with parsley, drizzle with lemon juice and more Old Bay seasoning.
Serve with garlic bread and cocktail sauce.
